There are indigenous grapes grown mostly in the northern coast of the Basque country in Pais Vasco to make a special wine called Txokoli (pronounced Chock-o-lee.) The grapes known as Hondarribi Zuri (white) and Hondarribi Belza (red) can be produced with a slight effervescence or still depending on the desired style.  

Rezabal is a family-owned winery set DO Getaria near San Sebastian. The parents bought the winery in 1995 and have received much acclaim with their txokolis. Ander, the father, is the winemaker and director of their projects. His wife and his daughter work in the winery and with marketing. The beautiful estate hosts private parties and weddings.  

The vineyards are trellised like those in Galicia, to protect the wines from moisture from rain and the ocean while gaining the most out of the sunlight. The Txokolis are light, elegant and pair well with seafood and tapas. Txokolis are traditionally poured from a special Spanish tool called a “Tapon,” to aerate the wine as it reaches the glass. The length of the pour can ascend from several feet from the bottle to the glass with practice
